Description

2024 harvest

SAORI is an exclusive premium dento hon gyokuro, selected and prepared for IKKYU by tea master Kiya san in Yame. 

A single-cultivar, single-origin gem made from Yabukita, SAORI was plucked around mid May. Kiya san explains that compared to early-season varieties, this delicate and balanced tea has a sweeter flavor, is more savory and slightly more astringent as well.

SAORI has the sweetness and umami typical to all gyokuro from Hoshino in YAME, but also has the astringency inherent to Yabukita, which gives it a lingering aftertaste. 

Hand-picked and covered by traditional rice straw mats, SAORI benefits from the demanding Japan Geographical Indication "GI" mark, proving that it was grown and processed according to Yame dento hon gyokuro traditions.

SAORI comes in a box of 5 bags of 8g each. Storage recommendations: keep in a cool, dry place, or even in your refrigerator.

Please note: Water temperature for this Gyokuro is very low : 40C / 104F. Keep this temperature for the 3 brewings and for the following time : 1st Brew 2min, 2nd and 3rd Brew 1min. 

For a perfect brewing experience you can use a flat Gyokuro teapot that allow the leaves to be evenly spread.

Brewing Instructions

For the second and third brew, use the exact same water quantity and temperature but steep the leaves only for 60s. After the third you can gently increase the temperature as per tasting.
