Made with Okumidori cultivar, ITOMI is a first-flush sencha powder from the producer of our popular Oku-Yame sencha, ISAMI and IYOKO. We fell in love with its smooth and nutty taste, and find ourselves enjoying it like we would a nice matcha: hot or cold, straight or in latte, with or without any sweetener.
Especially made for enthusiasts who like the combination of caffeine, focus, and a strong-but-not-bitter vegetal profile, ITOMI makes for an intriguing foray into powdered tea beyond matcha.
ITOMI is an excellent example of Kakuda san's hard work in tea development.
Kakuda san’s sencha are specially processed to achieve a higher theanine concentrations, similar to matcha.
Theanine, the amino acid found in green tea, varies in amount based on cultivar and harvest. Theanine has been suggested to increased relaxation and brain function, whole animal studies have suggested it can help lower blood pressure and reduce the excitatory state caused by caffeine (so less of a caffeine high, or crash.)
ITOMI comes in 40g bag, or in packs of 20 x 2g sticks that are the perfect companions of our Mini Matcha Shaker (especially in summer).
Since coming back from his holidays in Italy, Aldo has been making his after-lunch ITOMI cold espresso's shots with it (seen in the pictures (the espresso shot, not Aldo)).
Reminder: The Mini Matcha Shaker must be used only with cold water !

not sure how to get the best steep
Not a bad tea, but I've struggled to find good steeping parameters. Does tolerate multiple steepings well.
