Introducing ITSUKI, a sweet, premium ceremonial-grade matcha from Sonogi (Nagasaki) made from a single cultivar, Yabukita.

ITSUKI is an elegant, light-bodied matcha, with subdued umami and a faint bitterness. Upon opening the bag, you get the faintest hint of sweet white chocolate. Its creamy texture is elevated by its notes of pistachio and roasted flavor profile. A joy from first to last, it has a clean and structured finish with a gentle and lingering sweetness.

ITSUKI can be brewed several ways. The producers suggest using 70 or 80 C temperature water and between 1.5-2 grams of matcha. Whether at a low temperature for a smooth brew or a higher temperature and more powder for an enhanced impression, ITSUKI retains its superior flavor balance. This means you can enjoy the full flavor at a higher temperature and higher concentration, without an increase in bitterness. 

The strong finish and sweet aftertaste of ITSUKI makes it excellent for both standalone drinking and mixed in with milk or another alternative for a latte. Despite its light body, ITSUKI has a strong presence that won't be drowned out in a mixed drink. 

One of a group of four young producers, Nakayama san has blazed a path in Sonogi's tea industry by creating the first Sonogi-origin matcha in accordance with strict EU regulations. Much like sister ICHIKO, ITSUKI was made with the guidance of a ceremonial-grade matcha master from Uji, firmly placing it and Sonogi matcha on the map for discerning drinkers.

NAKAYAMA KOSUKE


The tea factory of Nakayama family has been in operations for 70 years in Higashi Sonogi. Their tea fields cover about 600 ha. The Nakayama family is strongly committed in favour of practicing an environment-friendly agriculture.

To preserve their land and its soil, they use only organic fertilisers that they prepare themselves. To fight against a failing domestic demand for green tea, the Nakayama family works hard to improve communication and build partnerships with other tea farmers as well as actors in other industries.

Nakayama san, along with 3 tea producers, has blazed a path in Sonogi's tea industry by creating the first Sonogi-grown and made matcha. Hand-in-hand with a ceremonial-grade matcha master from Uji, they've created a unique matcha of Sonogi terroir.
