WHITE TEA: TEA TASTING BY YUKA-SAN
Tea instructor Yuka-san and Jana introduce Koga-san's WHITE TEA. You can prepare this tea like a sencha, but today Yuka-san prepares it like a gyokuro. After brewing, its beautiful golden leaves make for a wonderful and healthy snack!
White Tea (白茶, also called Hakugouginshin and 'golden sencha') belongs to the family of green tea (non-fermented tea). A few weeks before harvest, the fields are shaded and 100% of sunlight is blocked.
With almost no bitterness and no astringency but a sweet, almond taste and a well defined umami, White Tea is a unique experience. It also has up to three times more of amino acids than in sencha! You can have a look at our selection of premium White Tea here.
Brewing instructions are as follows:
Tea: 6-7g (0.21-0.27oz)
Water: 200ml (6.76 oz)
Temperature: 50-60C (122-140F)
Brewing: 60-120s
