Tea instructor Yuka and Jana share their brewing technique and impressions for "JUN" our High-Grade Organic Sencha from Yame.

JUN: TEA TASTING BY YUKA-SAN

In this new video, tea instructor Yuka and IKKYU team member Jana talk about how to brew a flavourful cup of our Yame organic sencha JUN. We did not anticipate the fact that Yuka san would present the tea in a wonderful traditional kimono and felt even more honoured to share this moment of pure delight.

Again, we did a one shot video giving you this live experience filled with laughters. A true green tea moment as we like at IKKYU.

Yuka -san personally knows Irie-san, the producer behind this incredible tea, JUN, grown completely organically in the mountains of Yame. So, she had the time to experiment different brewing techniques and in this video she shares a different one than what the producer himself recommends Slightly cooler water and bit longer brewing time enhancing the sweetness and umami of the tea.


Please note that water temperature is in Celsius (First brew : 50 to 60C = 122 to 140F, second brew 70 to 80C = 158 to 176F).

And you? Have you ever tried to change the brewing instructions? It can affect the taste in many ways, and if you keep the water temperature and time within recommended limits, it will offer you endless variations. Keeping in mind that lowering the temperature will decrease the caffeine amount (and bitterness) this can also help to drink a stronger tea later in the day.
